These grilled sardines make a wonderful Summer supper – seasoned with chilli, garlic and lemon, they’re hot, tangy and delicious!
Ingredients, to serve 4:
- 1 red chilli, deseeded and finely chopped
- 1 lemon, zested and juiced
- 1 garlic clove, crushed
- 2 tbsp olive oil
- 8 gutted sardines, approximately 100g each, with small slits cut on one side of each sardine
- Tabasco
- Green salad to serve
Method:
First, get your BBQ going so that it is pre-heated and ready for your fish!
Then mix the chilli, garlic and oil with the lemon zest and 2 tsp of lemon juice and season with salt and black pepper. Rub this mixture all over the sardines, making sure to rub it well into the slits you’ve made and the body cavity.
Cook your sardines for 3 minutes on each side until they are thoroughly cooked through and the flesh easily flakes away from the bone.
Serve the sardines, topped with a few drops of Tabasco, on a small bed of green salad – and enjoy!
